Millet and Peanut Salad

Ingredients:

  • 1 cup millet
  • 2 cups water
  • 1 cup roasted peanuts
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions:

  1. Rinse the millet under cold water.
  2. In a medium saucepan, bring water to a boil. Add the millet, reduce heat, cover, and simmer for 15 minutes or until water is absorbed.
  3. Let the millet cool to room temperature.
  4. In a large bowl, combine the millet, roasted peanuts, cherry tomatoes, cucumber, red onion, and parsley.
  5. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  6. Pour the dressing over the salad and toss to combine.
  7. Serve immediately or chill in the refrigerator until ready to serve.
