Ingredients:
- 1 cup millet
- 2 cups water
- 1 cup roasted peanuts
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions:
- Rinse the millet under cold water.
- In a medium saucepan, bring water to a boil. Add the millet, reduce heat, cover, and simmer for 15 minutes or until water is absorbed.
- Let the millet cool to room temperature.
- In a large bowl, combine the millet, roasted peanuts, cherry tomatoes, cucumber, red onion, and parsley.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Serve immediately or chill in the refrigerator until ready to serve.
